Here’s a recipe acknowledging the popularity of California wine and fresh Meyer lemons.
Meyer Lemon Vinaigrette
2 cups dry white wine
2 shallots – chopped
Juice of 1½ Meyer lemons
½ Tbsp. rice vinegar
Zest of lemons
¾ c. olive oil
Bring wine to a boil, over medium heat. Cook until reduced by about half. Add lemon zest & shallots. Let steep until cooled (about 20 minutes). Pour into bowl & whisk in the lemon juice & rice vinegar. Gradually add olive oil in a steady stream, whisking constantly.
Season. Serve over seafood or mixed greens.
